This cuvée is emblematic: it comes from the production of students at the Gionges School of Oenology. Its brilliant gold color is dotted with fine, scattered bubbles. The nose is rich and luscious, with hints of granny smith, fresh citrus and spicy stewed white peaches. The attack on the palate is frank, suave and delectable. The sensation is one of comfort and elegance. Serve as an aperitif or with a refined meal, such as grilled turbot with choron sauce.

Lady Dolan

Lady Dolan is the brand of the Crolière cooperative, the smallest in Champagne, created in 2012 by a group of former students of the Gionges viticulture and oenology school. The champagnes are made with grapes from the school's own vineyards as well as those of former students. The vineyards are located in the great mountain of Reims, the Marne valley, the Côte des Blancs, the Sézannais and the Coteaux Vitryats. Cellar work is carried out by the students under the guidance of Pierre de Groote, cellar master and teacher. The brand is a tribute to Rose Dolan, an American who bought and then donated the Château de la Crolière, which now houses the school.
