The blending of the 2013 and 2014 vintages allows this cuvée, already presented in our previous issue, to find its balance: the wine is ripe, rich, chalky and doesn't need the blush of dosage to seduce. Serve with a seafood platter.

Mathieu-Princet

The champagne house was founded by Françoise and Michel Mathieu-Princet in the 1960s with one hectare of vineyards. Based in Grauves, straddling the Côte des Blancs and the southern slopes of Épernay, their daughters, Sylvie and Véronique, have taken over the reins. Together, they manage the family vineyard, which spans 9.3 hectares across five communes within the appellation, including two Premier Cru sites. They produce various cuvées using only Chardonnay and Pinot Noir grapes and age their wines for extended periods, up to 10 years for vintage champagnes.
