Lovely bitter almond nose. An airy mouthfeel with finely kirsch aromas for this cuvée which is both structured and fine, developing fine bitters. The grapes are rich and ripe, and the dosage of 6 grams per liter seems justified. A Champagne with a sapid, saline finish that will work wonders with warm oysters in saffron sabayon.

Pascal Mazet

The Pascal Mazet champagne house, with 2.2 ha of vines, has put down roots in the small village of Chigny-les-Roses, a terroir classified as a premier cru, a first step towards quality. But quality doesn't stop there! Pascal Mazet favors working the soil under the vine rows to aerate it and bury natural organic amendments and fertilizers chosen with respect for the environment. Grass growth is also controlled by mowing. These cultivation practices prevent erosion and encourage deep rooting of the vines. The estate has been certified organic since 2012. Pascal's son Olivier took over the reins of the estate in September 2018.
