A majority base of the 2013 harvest, supplemented by 40% of the 2012 harvest for this cuvée featuring an original blend of equal parts chardonnay and pinot blanc (35%), supplemented by pinot noir and pinot meunier (15% each). A period in barrel lasting almost 11 months lends elegance and depth to this cuvée, with its chalky chewiness and caressing texture enhanced by 7 years' rest on the lees. A fine gourmet wine to enjoy with grilled lobster.

Pascal Mazet

The Pascal Mazet champagne house, with 2.2 ha of vines, has put down roots in the small village of Chigny-les-Roses, a terroir classified as a premier cru, a first step towards quality. But quality doesn't stop there! Pascal Mazet favors working the soil under the vine rows to aerate it and bury natural organic amendments and fertilizers chosen with respect for the environment. Grass growth is also controlled by mowing. These cultivation practices prevent erosion and encourage deep rooting of the vines. The estate has been certified organic since 2012. Pascal's son Olivier took over the reins of the estate in September 2018.
