Sweet spices (turmeric, cardamom) add their perfume, and a bouquet of peonies and roses unfurls bewitching scents. After a straightforward attack, the fruity material becomes tangy (redcurrant) before a finish with intense citrus notes.

Located in the Ambonnay Grand Cru, in the Montagne de Reims, the Paul Déthune estate—now run by Pierre and Sophie Déthune—produces distinctive champagnes on 7 hectares, aging them in traditional Champagne barrels and large oak casks. Aging takes place in beautiful chalk cellars. The house prides itself on using organic soil amendments, as well as a zero-pesticide and zero-insecticide policy, and the estate has been certified organic since 2023. The next generation is taking over with the arrival of their daughter, Emma. Private tours are available by appointment.
