Vine peach, melon, wild strawberry and blood orange, you'd think you were in a well-stocked fruit shop. Sweet spices (turmeric, cardamom) add their perfume, and a bouquet of peonies and roses unfurls bewitching scents. After a straightforward attack, the fruity material becomes tangy (redcurrant) before a finish with intense citrus notes.

Paul Déthune

Located in the Ambonnay Grand Cru, in the Montagne de Reims, the Paul Déthune estate—now run by Pierre and Sophie Déthune—produces distinctive champagnes on 7 hectares, aging them in traditional Champagne barrels and large oak casks. Aging takes place in beautiful chalk cellars. The house prides itself on using organic soil amendments, as well as a zero-pesticide and zero-insecticide policy, and the estate has been certified organic since 2023. The next generation is taking over with the arrival of their daughter, Emma. Private tours are available by appointment.
