Ultra-fine bubbles flow through this grand cru cuvée, made from 75% pinot noir and 25% chardonnay. The nose is floral, with redcurrant and cherry on an invigorating citrus background. The palate is "chalky", with a few bitters that are a delightful match for a table, such as poularde with truffled cream.

Pol Couronne

The house, founded by Pol Auguste Couronne, had been making confidential champagnes since 1887. Jean-Baptiste Prevost inherited the family business in 2013. The 5-hectare estate works according to biodynamic principles. The estate sells 50,000 bottles a year, and recently added a new cuvée, "L'Envol Bleu", in collaboration with Rémois artist Iemza. Numerous wine tourism services are offered at the estate, including tastings, masterclasses and sabrage workshops.
