This cuvée develops a lovely nose with aromas of turmeric, paprika and yellow flowers, all with a very airy side. Barely dosed, this wine, which spent two winters in the cellar before bottling, is both enveloping and round, with lovely bitters. A touch of wood on the finish dries it out a little. For its powdery side, open it at table with a well-roasted white pudding and apple trio.

On the cool soils of the Marne Valley, David and Jessica Faivre craft single-vineyard wines to showcase the richness of their terroir. Their 6.2 hectares of vineyards, planted primarily with Pinot Meunier—along with a few dozen ares of Chardonnay, Pinot Noir, and Pinot Blanc—have not been treated with herbicides since 2005. In line with this commitment to minimizing their environmental impact, winemaking is carried out with minimal inputs, allowing the wines from this three-generation family estate to develop their signature creamy texture.
