A blend of half Chardonnay and half Pinot Noir musts, this ratafia is made according to the rules of the art: half the grapes are aged in barrels, the other half in glass carboys. The result is a fine, digestible, fresh wine with a bitter, gourmet note of licorice root. The 195 g/l sugar content makes it a perfect match for pan-fried foie gras with apples and licorice stick infusion.

Founded in 1952 by 16 winegrowers determined to highlight the characteristics of the Champagne terroir, Sanger—based in Avize—now vinifies the contributions of 80 winegrowers representing 14 hectares across 42 crus spread across Avize, Oger, Cramant, Verzy, Verzenay, Bouzy, Ambonnay, and Ay, as well as a few terroirs in the Aube region. The result is a range comprising three collections—the Originels, the Millésimes, and the Collections—in which all cuvées, blending tradition and modernity, share the common trait of being neither filtered nor clarified.
