A new chef at Pressoir d'Argent

Romain Lorenzon, chef at Pressoir d'Argent Gordon Ramsay, the Intercontinental Bordeaux restaurant run by the famous Scottish chef, was replaced at the end of January by Alexandre Koa, his former second-in-command. We'll give him time to settle in before taking a closer look! F. T.

  • A step ahead

Gaëtan Gentil to move his Prairial in October

Gaëtan Gentil, who (along with Alexandre Mazzia) was the first recipient of the Dotation Jeunes Talents Gault&Millau (in 2014), will be leaving rue de Chavanne in Lyon at the end of the summer. A new Prairial will open in October, "still in the Confluence district, with unchanged capacity but increased comfort". To be continued. F. T.

Musical chairs

Clio Modaffari and Anne Legrand, who were voted Jeunes Talents Gault&Millau in 2018 when they worked at La Belle Étoile, Niort, and went on to win 2 toques at L'Innocence, Paris, joined La Flibuste, Villeneuve-Loubet, on February 1. Their predecessor, Nicolas Thomas (who was also a Jeune Talent the same year, when he worked at La Promenade, Verfeil), has already found a new home "in a Relais & Châteaux". A game of musical chairs we'll be keeping a close eye on! F. T.
