The upright Dominique Maës brings the soul and character to this charming restaurant within the castle grounds. The cuisine here is masterful; local ingredients take center stage, and prestige is certainly present, as evidenced by a lovely lobster menu. On a daily basis, the offerings are well-thought-out, featuring a reasonably priced “Prémicéen” set menu at €65—an attractive price for this three-toque cuisine: “Malouin”-style tartare with citrus and passion fruit, free-range chicken thigh stuffed with goji berries, leek and zucchini purée with eggplant caviar, and peach profiteroles with vanilla cream and saffron ice cream.
