This cuvée reveals a complex nose with notes reminiscent of an open fire, with aromas of cocoa, vanilla, licorice and pastry, enriched by touches of honey, orange and apricot jam, followed by hints of mint and basil. The palate offers a creamy texture and fine, perfectly controlled bubbles, where the cask imposes itself without weighing down the whole. Freshness, citrus notes and a straightforward finish. A quality wine, ideal with blanquette or sweetbreads.

Chevreux-Bournazel

Stéphanie Chevreux and Julien Bournazel handcraft their cuvées from two parcels of Pinot Meunier and two micro-parcels of Chardonnay in the commune of Chierry. Biodynamic (certified in 2015), they make their own potions, use fertilizers from their own herds and plant fruit and vegetables in the vineyard. Braiding tests are also carried out. The wines are generally aged for ten months in barrel, and bottled using traditional tools.
