A blend of equal parts Chardonnay and Pinot Noir for this thirst-quenching, full-bodied cuvée, which retains all its freshness thanks to the absence of malolactic fermentation. The palate is reminiscent of citrus zest, with the beginnings of evolution (hints of wax, humus, sandalwood). A hint of bitterness on the finish makes this champagne a perfect match for scallops with lemon zest and cream.

With inherited know-how passed down for three generations, Pascal has managed the small family domain since 1993 with his wife Florence, and cultivates 2 hectares respecting their terroir on the Montagne de Reims. The wines are vinified without malolactic fermentation to preserve the freshness of his cuvées that are commercialised only after resting a few years on lees in the cellar.
