We'll fall under the spell of this 2012 vintage, all subtlety and balance. The nose, with its fine, delicate bouquet, combines white peach, acacia honey, lime blossom and a hint of licorice. On the palate, tension and freshness join forces for a refined finish with a famous length and hints of toasted hazelnuts. A seductive champagne in every respect, to be paired with timbales of crayfish in Nantua sauce.

Pascal Devilliers

Building on a legacy of expertise passed down through four generations, Pascal has been managing, alongside his wife Florence, the small 2-hectare family vineyard since 1993, cultivating the land with respect for its Premier Cru terroir. Based in Ville-Dommange, a charming little village in the Montagne de Reims region, he produces his wines without malolactic fermentation to preserve the freshness of his vintages, which he releases only after they have rested for several years on slats. The estate offers tours and tastings, as well as a guesthouse.
