Les chefs font leur rentrée: 7 new projects to discover
As the summer draws to a close, back-to-school season begins. Restaurants are being handed over, construction work completed, new names introduced... The chefs are also making a comeback, with many changes in store.
The back-to-school season isn't just about going back to school. In the kitchens, too, the season promises to be a rich one. Chefs are reinvigorating the gastronomic scene, with seven projects that oscillate between fidelity to tradition and creative audacity. Here are the addresses not to be missed.
Transmission and renewal at café À La Renaissance
The handover of this not-to-be-missed bistro in Paris's 11ᵉ arrondissement is just around the corner. The desire of the new owners is not to recreate a place, but to breathe new life into the existing, without betraying its history and heritage. The menu is designed for every moment of the day. Breakfast for regulars, buffets with starters and daily specials at lunchtime, afternoon nibbles and evening sharing: each moment has its own atmosphere. And let's not forget the lively, natural and non-invasive wine list, in keeping with the restaurant's values.

A new lease of life at Lazare, Eric Frechon's brasserie
The brasserie at Gare Saint-Lazare returns after a summer break... and a few changes. Lazare has a new decor and a new chef, Guillaume Chevalier. But the DNA remains the same, with classic dishes such as the sausage-purée and the Paris-Deauville still on the menu. A generous address that reflects the French spirit!

A must-visit address soon to return to Megève
Although the final date has yet to be announced, Flocons de Sel, chef Emmanuel Renaut's iconic restaurant, will open its doors this autumn after more than a year's work. The entire estate has been renovated, from the hotel to the spa to the gourmet restaurant. The chalet, with its breathtaking views of the mountains, will once again be able to welcome visitors and immerse them in the heart of the Alpine terroir.

Aldéhyde expands its gastronomic offering
Chef Youssef Marzouk's restaurant is changing for the new season. Lunch will be divided into four stages, and two tasting menus will be offered in the evening: 5 courses at €110 and 7 at €135. To accompany these changes, opening times will also be modified, with lunch from Tuesday to Friday, and dinner from Monday to Friday.

Albufera replaces La Table de Cybèle in Boulogne-Billancourt
Albufera will take the place of La Table de Cybèle, Boulogne's landmark restaurant, in early September. At the helm will be chef José Dantas, who has imagined his first restaurant as a bistro featuring bright Mediterranean cuisine faithful to his roots. For this opening, he will be supported by Émile Cotte, chef of Baca'v.

Datsha becomes Finka with the installation of Esteban Salazar
from September 1, 2025, chef Esteban Salazar will take up permanent residence at Datsha (where he has been in residence for the past few months). For the occasion, the restaurant will be renamed Finka. An opportunity to discover the cuisine of the chef, revealed in the last season of Top Chef. On the menu are plates to share, inspired by Franco-Latin cuisine, a nod to the chef's origins.

Erwan Ledru takes the helm at Les Confidences
Les Confidences, the restaurant of the Hôtel San Régis, is changing chef. Erwan Ledru will take over the reins, replacing Michele Fanciullo. Inspired by Paris and Brittany, where he spent his childhood, the chef has imagined a generous, elegant menu, in the image of the hotel that houses it.
