What a lovely golden color, with lots and lots of bubbles! The nose reveals aromas of ripe medlars and fresh herbs. The palate is harmonious and precise, appetizing and saline, with notes of redcurrant and licorice that give it slightly bitter touches and a long finish. This champagne is a perfect match for long-aged pressed cheeses, such as old mimolette or abondance.

Of the estate’s 9 hectares, nearly 8 are planted with Pinot Noir, the signature grape variety of the Côte des Bar region, the southernmost wine-growing area in Champagne. The family-owned estate, located in the village of Noé-les-Mallets, has been managed by Vincent Drouilly—a fourth-generation winemaker—since 1996. The wines are aged partly in oak for a minimum of 4 years. The estate adheres to the Terra Vitis charter and is also a member of the “Champagnes de Vignerons” label.
