53 months of ageing later, and what aromatic complexity! A dazzling nose of Granny apple, citrus, pine and eucalyptus. Tonic and invigorating with aromas of white pepper, the nose already makes you salivate. The attack is fresh and builds, revealing fine woody, vanilla notes, with a hint of pastry. It's rich, ripe, and the finish impresses with its dynamic chalky minerality and controlled acidity. The finish is intense, spicy and salivating. A high-flying champagne, ideal with monkfish.

Égly-Ouriet

A family-owned estate for four generations, it is now managed by Francis, Charles, and Clémence Égly, who cultivate 10 hectares of Grand Cru vineyards in Ambonnay, Verzenay, and Bouzy, 2 hectares of Premier Cru Pinot Meunier on the Vrigny terroir, and 1.5 hectares—primarily Chardonnay—in Bisseuil. Their champagnes, with their velvety and spicy textures, are exceptionally precise. In recent years, the range has expanded to include vineyards on the Saint-Thierry massif northwest of Reims—specifically, 7 hectares in Trigny—where the soils are sandier and the wines exhibit a distinct character.
