With its 36 months of ageing, no less, this is one hell of a pastry nose: lemon meringue pie, vanilla, roasted hazelnuts, it's at once appetizing, dashing and gourmand. On the palate, the bubbles crackle with a slight tension before gently enveloping the palate with their creamy volume. The vinosity is clearly present, combined with ripe, flavorful yellow fruit. The finish is rich and powerful, while retaining the straightforward tension that balances it out so nicely. A racy champagne, a true gourmet wine, which calls for a creamy white meat with a mushroom sauce.

Égly-Ouriet

A family-owned estate for four generations, it is now managed by Francis, Charles, and Clémence Égly, who cultivate 10 hectares of Grand Cru vineyards in Ambonnay, Verzenay, and Bouzy, 2 hectares of Premier Cru Pinot Meunier on the Vrigny terroir, and 1.5 hectares—primarily Chardonnay—in Bisseuil. Their champagnes, with their velvety and spicy textures, are exceptionally precise. In recent years, the range has expanded to include vineyards on the Saint-Thierry massif northwest of Reims—specifically, 7 hectares in Trigny—where the soils are sandier and the wines exhibit a distinct character.
