74 months of ageing later, we are faced with an immense champagne with a dark golden color. It delivers oxidative notes of undergrowth, zan, bitter almonds, cumin and ginger. Then come rose, star anise and honey. The attack is soft on the palate, with delicate bubbles and a chalky, saline texture. It then unfolds between woody tannins and aromas of warm spices and flowers. The finish is interminable, reflecting the terroir. Menthol, dried fruit, redcurrant, perfect with meat in sauce. Grandiose.

Égly-Ouriet

A family-owned estate for four generations, it is now managed by Francis, Charles, and Clémence Égly, who cultivate 10 hectares of Grand Cru vineyards in Ambonnay, Verzenay, and Bouzy, 2 hectares of Premier Cru Pinot Meunier on the Vrigny terroir, and 1.5 hectares—primarily Chardonnay—in Bisseuil. Their champagnes, with their velvety and spicy textures, are exceptionally precise. In recent years, the range has expanded to include vineyards on the Saint-Thierry massif northwest of Reims—specifically, 7 hectares in Trigny—where the soils are sandier and the wines exhibit a distinct character.
